Seeded Almond Bread

This is hands down the best darn Almond Flour “bread” I have made yet – period.

Raise your hand if you  love bread (ohhh me!) – there’s just something so satisfying about the carb loaded goodness it brings.  Bread is pretty comparable to a warm hug.  It makes you feel euphoric and easy to crave more.  But let’s be honest here –most bread you find in the stores are crap (there I said it!).  They are loaded with chemicals and ingredients that don’t even scream real bread.  No thank you!  Now, there are some good companies out there (my favorite is Food For Life Baking Co) that make quality products – so not all breads are created equal.

I’ve done some experimenting with different flavors and textures and this recipe is the winner.  It’s a nice mix between a dense bread and cake – just how I like it.

So many of my clients suffer from autoimmune conditions, gluten-intolerances or follow one of my nutrition programs (Metabolic Balance® & 28 Day Ultimate Whole Foods Refresh) that eliminate gluten so I am always trying to find a way to bring them another version of bread goodness.  (I am still working on an egg-free recipe – so for those who cannot have eggs, stay tuned!)

What I love about this recipe is the flexibility that comes with it.  You can omit the nuts/seeds and add raisins or coconut or pineapple or tons of fresh herbs – whatever your heart desires.  But definitely make this bread – slather it with some nut butter and berries and you’ll experience pure bliss.

Instructions
  1. Preheat oven to 350F.
  2. Mix all the dry ingredients together (except the seeds).
  3. In a food processor, mix the wet ingredients. Add to the dry ingredients and mix well. Then stir in the seeds.
  4. Pour dough into a loaf pan lined with parchment paper. If you do not have parchment paper then simple grease the loaf pan before pouring in the dough.
  5. Bake for 35 minutes or until a knife comes out clean (from middle).
  6. Let the loaf fully cool before removing from the pan or serving.
