Things have been busy lately….really busy.  So busy that I have to make a confession.  I’ve skipped a breakfasts do to lack of planning.  GAAAASP.  Yea, this is real life and it happens to all of us at some point.  I don’t ever try to sugar coat that my life is food planning perfection, even though as a food blogger and nutritionist it may seem that I always have that in control.  There are absolutely insane days where I throw the most random things together for my family and myself and then there are days where I have “the plan” in place,  What I have learned from the craziness that we call “life”, is that planning is the most important tool for success – in anything.

Plan: P-L-A-N.  This little word is actually something very big.

If you want your business to succeed, you have to have a business plan.  If you want to have healthy nutrition habits, you have to plan ahead and make sure you have the right foods to make the right choices.  If you want to get fit, you have to plan out your workouts and make the time to exercise.  If you want to have a BBQ at your house, you have to make some efforts in the realm of planning.  If you want to travel and see the world, you have to plan to save money and organize the efforts before hand.  See, planning is key and can be applied to many things.

Ok, now that I gave you a quick life lesson ? – back to my power bars.  These bars were created out of the sheer motivation to plan, so that my family and I had a healthy option when life got crazy.  My husband is a pro- athlete and these plant-based little pieces of heaven are a savior when he’s running behind on his morning routine.  I was even able to tweak them a bit for my Metabolic Balance® clients and they were a hit as a breakfast option.

These bars come together easily (after a night of soaking the nuts & seeds)

Instructions
Soak the nuts & seeds
  1. In a glass bowl combine pepitas, sunflower seeds, almonds, & 1/2 tsp sea salt. Cover with warm filtered water and let sit on the countertop for at least 8 hours (or overnight).
Preparing the bars
  1. Preheat over to 375F. In a small glass bowl, cover the 10 dates with hot water. In a second glass bowl, cover ground flaxseed with 6 TBSP water to make a flax egg. In a third glass bowl, cover chia seeds with 1/4 cup water. Let all bowls sit for 10-15 minutes.
  2. Drain the water from the nuts & seeds and rinse in a strainer.
  3. Add nuts & seeds, soaked dates (make sure to reserve the excess liquid), flax egg, soaked chia seeds, pinch of sea salt & cinnamon to a food processor. Pulse until combined then transfer to a large bowl.
  4. Add the oats and combine. If the mixture is too sticky add more oats, and if it is too dry add the remaining reserved date liquid.
  5. Press mixture into a lined baking pan or sheet. Bake for 15-20 minutes or until browned.
  6. Remove from oven and allow the bars to cool for at least 2 hours. Cut into even bars. Option: drizzle with dark chocolate (yum!)
