Talk about bang for your buck! I’m giving you guys two recipes in one post and I’m sure there’s going to be a lot of drooling going on while reading this. ?
Friends, I am here to tell you that both of these recipes hit it out of the park. What I really love is the versatility. Be honest….who doesn’t love cheesecake. And ever since I’ve discovered the world of raw cheesecakes, I honestly think it’s going to be hard for me to go back to the dairy, calorie laden traditional cheesecakes.
I get easily excited about any dessert with a lemon profile. A little fact – my wedding cupcakes were filled with lemon curd, I had lemons on all my table centerpieces…and on my wedding invitations. You get my LOOOVE?! It’s real. ??
Get this….9 ingredients in the ENTIRE cheesecake. Gaaaaaaaasssssssp. I know, I often do the same things when desserts taste phenomenal and have minimal ingredients. Oats, almonds, prunes for the crust & soaked cashews, coconut oil, lemon (zest & juice), almond milk, Kineta Matcha Tea, and maple syrup for the cake. THAT’S IT. ? ?
After mixing the cheesecake ingredients together, I couldn’t help but begin to eat it with my spoon! It was so good. I didn’t want to waste a single ounce of it. I made two 6 inch mini cakes because I have to admit that I am not great at sharing desserts and wanted a whole one to myself. Yes, we all have our flaws… But you can also you a 9 inch springform pan and make one large cheesecake. Put it all together, freeze for about 3-4 hours and your good to go! I love the simplicity.
And now, my friends, we are on to the Matcha Coconut Orange Smoothie. Loaded with flavor, vitamins & minerals, good fats, and best of all loaded with antioxidants. This smoothie took me 5 minutes to throw together in the blender and it made two servings. If you are not a fan of coconut milk, you can also use almond, soy, rice, or hemp milk. Regardless of the milk you use, you know your drinking something good….and that should make you happy!
