Gluten-Free Pineapple Walnut Bread

There’s something about bread + nuts + sweetness that goes straight to my heart.  And of course I had nothing prepared with those ingredients.  I thought for a second to head to the bakery to see what I could find, but then I thought searching my pantry would be easier – and keep me from the cold.

My husband’s grandmother makes this Applesauce Cake that is the bomb-diggity.  So I decided to make an adaption of that recipe – less sugar, gluten-free, add some veggies, and with pineapple (because that is all I had!).  I have to say that usually I have to make anything sweet a few times before I get the recipe right, but this one came out perfect.

Not too sweet, perfectly moist, contains veggies and loaded with comforting flavors. Slather a bit of butter, cream cheese, or nut butter on this one – yup….

  1. Preheat the oven to 350F. Spray the inside of a loaf pan and line with parchment paper.
  2. In a medium bowl - sift together the flour, cinnamon, nutmeg, salt, & baking soda.
  3. In another bowl, beat oil and sugar together until smooth. Add egg and combine. Stir in pineapple, carrots, and walnuts.
  4. Add the wet ingredients to the dry ingredients and stir only to blend. Bake for 40-45 minutes or until knife comes out clean. Allow the bread to completely cool before cutting.

    Hey Tanya! I just tried this as muffins instead of a loaf and it turned out amazing. I made a couple small changes based on what I had in my cupboard: substituted white sugar for the coconut sugar and did 1/4c unsweetened applesauce/ 1/4c coconut oil. I have been looking for healthy, gluten free snacks/treats and this was perfect, thank you! 🙂
