Gluten-Free Pineapple Walnut Bread

Instructions
  1. Preheat the oven to 350F. Spray the inside of a loaf pan and line with parchment paper.
  2. In a medium bowl - sift together the flour, cinnamon, nutmeg, salt, & baking soda.
  3. In another bowl, beat oil and sugar together until smooth. Add egg and combine. Stir in pineapple, carrots, and walnuts.
  4. Add the wet ingredients to the dry ingredients and stir only to blend. Bake for 40-45 minutes or until knife comes out clean. Allow the bread to completely cool before cutting.
